Le Clos (meaning “enclosed vineyard”) is a single vineyard wine that stems from 50 to 70-year-old trellised bush vines. Planted on a steep, southwest-facing slope, the six acre vineyard is enclosed by an ancient stone wall. This wine is a true expression of its clay and limestone terroir which is called tuffeau, and is a type of marine sedimentary rock.

2016 brought a sunny summer with enough rain at the right time to enable the grapes to reach optimum ripeness. There was a long, slow ripening period and harvest started a week later than usual, allowing for a rich and balanced vintage.

Grapes were handpicked and whole bunch pressed before undergoing cold settling for 24 hours in tank. 100% of the wine was put in 400 liter French oak barrels (15% new wood with the rest being a mix of 2nd to 4th fill) where fermentation was carried out with only natural yeast followed by 12 months of aging in barrel on the fine lees, without racking. Domaine Vincent Carême’s cellar is a traditional 16th century trogolodytic ‘cave’ which is hand carved into the limestone rock. The temperature remains all year between 50 ̊ to 57 ̊F.
