Pouilly-Fuissé Solutré is comprised of a blend of grapes from different vineyard sites in the village of Solutré. The wine consists of 50% estate fruit and 50% from a trusted friend’s vineyard. The bush vines average 50 years of age and are set in soils of sedimentary rocks from the Cretaceous period, yellow clay, limestone and silex. Situated on slopes 785-920 feet above sea level, the grapes receive southern exposure. The vineyards are farmed sustainably, using chemicals less often and less aggressively than conventional growers. The Auvigues are non-interventionists and strive to create Chardonnay in its purest form.

Grapes were harvested by hand from August 29th through September 10th when they were determined fully ripe. They were pressed immediately by pneumatic press and underwent a static settling over the course of a 12 hour period. Only the clear juices were vinified—70% of the wine in stainless steel tanks, 30% in French oak barrels (25% 2nd-3rd fill, 5% new oak) for alcoholic and malolactic fermentation. The wine was aged on its lees (and stirred regularly) for 10 months. It was then fined and filtered before bottling, which was carried out in the spring in order to preserve the coolness and natural fruit of this cuvée.
